I’ve been struggling a bit lately with ideas for quick, healthy lunches for my boring day job as an office zombie and recently I bought FARRRR too many takeaway boxes in an attempt to clean up my cupboards and give them a more restaurant feel as far as organisation goes… In case you’re wondering, it kinda worked. Whilst I was undergoing this mammoth task I realised I was harbouring too many cans of beans for one girl, the only thing for it? EAT THEM! I’m not sure if it’s been proven yet that beans actually do make you, erm, toot more, but if they do then I apologise in advance to my office (not really). With a protein packed snack box like this you’ll find energy levels lasting all through the dreaded 3pm munchies.
You will need:
1 400g can of red kidney beans
2 carrots (grated)
¼ small brown onion, diced finely
1 knob of fresh ginger (about 2 cm2 finely minced)
1 heaped teaspoon of horseradish cream
2 tablespoons of dark soy sauce
2 teaspoons of honey
4-6 tablespoons of dried wakame seaweed (quantity depends on your tastes, if you don’t like seaweed this can simply be left out altogether)
1 teaspoon sesame seeds (these can be omitted also if you have a nut allergy)
In a bowl put the dried seaweed, add boiling water to generously cover and let to sit for 2 minutes whilst the seaweed rehydrates (you can literally watch it expanding, pretty cool really)
Finely chop the brown onions and mince the ginger
Drain and rinse with cold water the seaweed and can of beans making sure to get rid of all the liquid
In a large bowl, in no particular order, you can add all of the ingredients and stir together.
Adjust the seasonings as you wish to your own taste, for a bit more of a bite add horseradish, for salt add soy and for sweet add honey.
Nb. If you are doing this for presentation leave the sesame seeds to be added right at the very end as a garnish over the top.
In case you’re wondering about the horseradish cream- Horseradish is the vegetable that wasabi is made of so this ingredient is not as out of place as it seems but is a more mild flavour than pure wasabi.
