We’ve been heavy on vegan recipes lately at Farm to Face because it’s difficult to deny the AWESOME impact eating less meat can have on the environment. We understand that not everyone wants to cut out meat completely so if you’re an avid meat eater we’d like to encourage buying free range, ethical, high welfare meat from certified farmers markets or your local butcher; this can make the world of difference not only to the quality and taste of your meal but also towards animal welfare and larger environmental issues.
We can rest easy knowing that our friends at the Groovy Food Company have us covered for delicious organic ingredients to help us create this recipe.
With all that said, this recipe is gluten free, dairy free and undeniably delicious. It would make a great snack or meal for two with sides.
For the chicken you will need:
- 1 chicken breast
- 3 eggs
- 3 tbsp coconut flour
- 6 tbsp crushed cornflakes
- 6 tablespoons of desiccated coconut
- 2 tsp salt
- 1 tsp white pepper
- 100-150ml coconut oil
For the dipping sauce you will need:
- 4 tbsp free range egg mayonnaise
- 2 tsp wholegrain mustard
- 2 tsp dark agave nectar
Pre heat the oven to 160 degrees
Whisk the three eggs together in a shallow bowl
Crush the cornflakes, they shouldn’t be dust but not too chunky. They will add extra some crunch to the chicken
Add all the dry ingredients together in a separate shallow bowl from the whisked eggs
Chop the chicken into bite sized pieces- mine were about half as big as a chicken nugget
We’re going to double dip the chicken pieces to get maximum crunch so first into the egg mixture, then into the dry mixture to coat, then repeat.
Shallow fry the chicken pieces in 2-3 batches in a medium hot pan, bear in mind here that the crumb coating can burn and smoke if the pan heat is too high. When frying you only want to get some golden brown colour on the outside coating, the chicken will still be raw inside and will finish cooking through in the oven.
Line a tray with baking paper and put the coconut chicken pieces into the oven to cook for around 10-15 minutes. Keep a careful eye on them that they don’t start to burn. Once ready cut one piece open to check that the inside is cooked through as raw chicken can be dangerous to eat.
For the dipping sauce you simply add all the ingredients together and stir thoroughly.
