Thanks to some very willing participants we hosted a soft launch Supper Club event in Sydney last month for the close of the Olympics. A Brazilian feast featuring tacos, empanadas and this traditional favourite. A fundido is a sharing plate of cheese and jalapenos…and in this case choritzo…served with tortilla chips and guacamole.
You’ll need…serves 4 sharing
250g chorizo mince or sausage with casing removed
1/2 spanish onion
1 clove garlic
2 tbs milk
250g provolone cheese
splash of beer
1 avocado, diced into 1/2 cm cubes
1/4 red onion, finely diced
1 roma tomato, finely diced seeds removed
lemon, juice of half
coriander, small handful diced
Guacamole: Mix all ingredients together with a splash of olive oil and seasoned to taste.
- Pre-heat over to 180’C.
- In a medium skillet fry off the chorizo. Place the chorizo in a bowl and drain the remaining oil. Save both.
- Return 1 tbs of the oil to the pan and fry the onion with a pinch of salt and a splash on beer. Add jalapenos and garlic until fragrant. Add milk and stir until thickened slightly.
- Remove from the heat and stir in 3/4 of the chorizo and all of the cheese. Transfer the skillet to a the oven. Top with the remaining chorizo and oil.
Serve with tortilla chips and guacamole
