Getting into the spirit of things for Fairtrade Fornight (Feb 29- March 13) I created this decadent nut spread, a home made and fairtrade take on nutella. It could be used on toast, pancakes or would be truly delicious on some warm (fairtrade) banana bread.
You will need:
Blitz the cashew nuts in a food processor until they resemble a dust/ nut meal.
Melt the chocolate over a double boiler
Add in 1 tablespoon of coconut oil and stir through
Add in 1 tablespoon of agave nectar and mix until combined
Add in the nutmeal and stir well until the mixture has come together
As the nature of these products separately solid rather than liquid it may need to be used whilst warm or warmed in the jar in a hot saucepan when using at a later date. To combat this more agave or coconut oil could be added but I feel that these proportions have the perfect flavour.
